It is completely against my nature to post anything up here other than pictures that I’d include in my portfolio so hear me out. Variety is important to me and so I thought what better way to introduce some than to have a “feature friday.” Each Friday my goal is to do something different…whether that’s cooking, baking, crafting or some kind of fun activity…that remains to be seen. I have serious Attention Deficit Disorder (ya’ll think i’m joking but i am sooo not) so it can get real fun real fast around here! haha!! Yes this is my photography blog and so I will include lots of pictures to keep with the theme. 😉 but lets have at least one day where we change it up a little. because seriously, if we’re talking about savoring life…isn’t “life” what we’re doing everyday? i knew you’d agree. 😉

This week lets cook! I need to start cooking again. I don’t know about you but my kids need to eat something other than chicken nuggets and organic pasta. So yeaaaaahh. I planned this meal on Wednesday when it still was dark and cold and gloomy outside. Today: sunny and warm. Go figure. Oh, and to boot: my girls chose “Snow Buddies” to watch for their “quiet rest” movie time?? what the heck? Its literally 65 degrees. Bright sunshine. Siiigh… oh well. We’re making CHILI. don’t laugh. Its really good.

Alright, here we go. This recipe is for “corn chili” and i’d give credit to the author if I knew who it was. I’ve changed the recipe enough to make it my own but we all know i’m no chef.

You will need: (to serve 4)

1 lb of ground beef (or turkey or chicken) I use extra lean beef usually
a pat of butter for saute (seriously ya’ll…not a lot)
1/2 cup chopped onions
1/2 cup chopped green pepper
1/2tsp salt (I use kosher)
1/8tsp pepper
1/2 tsp dried thyme
1 can diced tomatoes w/italian seasoning (14.5oz can)
1 can tomato paste (6oz can) diluted with 1 can water
3 cups frozen corn
1 can (16oz) kidney beans
1 TBsp chili powder

fixins: sour cream, shredded cheese, corn chips (fritos etc)….oh and most importantly a CROCK POT and 4-5hrs of cook time. 😉

Here we go!
1. choose a good assistant. when you’ve done that…let me know and we can move on. i’ll wait.

2. brown the beef in a skillet over medium heat _006web

3. while you’re warming up your butter in a small skillet, chop onions and green pepper to get ready to saute.

I don’t “do” onions. they really do make me cry. so i have one of these handy dandy slap-chop look-a-likes. quite helpful! yeah, i probably chopped these more into the “diced” category but who cares. it all tastes onioney once its in the chili

4. saute your onions and green peppers. go ahead and remove the beef from the heat for a minute so it doesn’t get nastily overcooked._013web

5. find the bag of cookies that you saved from last night’s cookie baking and start to…._014web
siiighhhh because you’ll drink a glass of water + crystal light instead. _015webthat way you can have a cookie AND thin mint ice cream for dessert tonight. :) its all about balance, right?

6. Ok. combine the sauteed onions and peppers with the beef and stir to mix. _016web

7. season with salt, pepper and thyme. _018web

8. now here’s where my recipe says “add tomatoes, tomato paste, water and corn and heat until the corn thaws.” did ya’ll SEE my skillet? ha! so I go ahead and put the beef mixture into the crock pot and turn it to the “high” setting. it all heats up the same anyway. I just start adding at this point…everything left on the list. BAM! and I’m like Emeril….its that easy.
sorry the pictures start getting kind of blurry…I had kids hanging on me at this point… you don’t have to use “roasted corn” …its all good!

what number am I on? 9. put everything in the crock pot. I’m pretty sure i already said that…just a friendly reminder to not pour it down the drain on accident. Don’t forget the chili powder!

Serve with corn chips, sour cream and shredded cheese…you know, after its cooked in the crock pot for 4-5hrs. That’s when its “reeeeeeall gooooood.” And I just realized that these pictures, while a great size for showing my work are WAAAAAAAY too big for feature fridays. So, next time, expect them to be more normally sized. 😉 Enjoy your chili!! I’d make it quick before it gets too warm out!
